Jacket Potatoes

Potatoes are such versatile things! You can use them in all manner of ways. One of Nanny Kimbo's favourite ways is the humble jacket potato. 


Kids tend to get on really well with jacket potatoes. The one I find gets the best reception is jacket potato with cheesy beans. This is a low calorie meal that is easy to make and contains all the necessary nutrients.




Another great jacket potato filling is ham and mushroom mixed with cream cheese. You'll need to add a little milk to the cream cheese if you're going to heat it up.




Jacket potato cupcakes is another winner! To make these, you bake the potato until the inside is soft and the outside is nice and crispy. Let them cool slightly then scoop out the potato and put the jackets to one side. At this point, you can be as creative as you like, add whatever ingredients you like to your filling. We like tomato puree (to make the potato pink), ham, sweetcorn and a cherry tomato to top it off. Simply mix all of your added extras wit the mashed potato and then scoop the mixture back into the jackets. 




I always serve light meals with a selection of crudités or finger foods such as cucumber, peppers, carrots, celery, sliced or cherry tomatoes and a hummus dip.
