Salmon, pea and sweet potato fishcakes

Fishcakes are so delicious! They are arguably better than fishfingers!

Typically, fishfingers are made with cod or haddock and potato. However, I like to sub in salmon and sweet potato instead. The results are delicious!!

Ingredients:
Salmon filles
Frozen peas (MUST BE FROZEN!)
Sweet potato mash
Golden breadcrumbs
Cream cheese (optional)
(I used shop bought breadcrumbs as they are nice and fine but you can make your own if you prefer)

Bake the salmon according to the instructions. Let cool and flake.
Blend the frozen peas until they resemble crumbs.
Combine ingredients adding cream cheese if desired.
Spoon a heaped tablespoon of mixture, roll into a ball then flatten slightly.
Coat fishcakes in breadcrumbs then bake at 200ยบ for 20 minutes.

Serve with salad for a light lunch or vegetables and savory rice for dinner.

Fishcakes can also be eaten in a buttered bread roll as a light snack!
